#1 -PMG&GC Featured Chefs: Sylvain Desbois & Pablo Lopez Ortega, St. Regis Punta Mita


We’re starting the countdown to the culinary event of the year in Punta Mita –the Punta Mita Golf & Gormet Classic–with the star chefs of organizing host hotel, the St. Regis Punta Mita Resort.

Sylvain Desbois, St. Regis Punta Mita, Mexico
Sylvain Desbois is executive chef of the St. Regis Punta Mita’s AAA Five Diamond Carolina restaurant, the signature restaurant of the resort. With more than 10 years of culinary experience, Desbois most recently served as chef at Hotel Fiesta Americana Grand Coral Beach in Cancun, Mexico — recipient of the AAA Five Diamond Award. From 2000 to 2004, Desbois was chef de partie of the Michelin two-star Restaurant at Hotel Le Bristol in Paris, France. Previously, he held a top culinary position at Bernard Louiseau’s La Côte d’Or, which earned three Michelin stars. Desbois received his diploma from the Université Sainte-Anne School of Tourism.



Pablo Lopez Ortega, St. Regis Punta Mita
Pablo Lopez Ortega is the Executive Chef of Las Marietas restaurant at the St. Regis Resort, named after three islands along the Punta Mita coast. He oversees the restaurant’s authentic regional Mexican cuisine, offered daily for breakfast and lunch.

Prior to joining St. Regis, he was executive chef at Hotel Emporio Reforma in Mexico City. He previously served as a chef instructor at the Ambrosia Culinary Center, where he also completed his culinary studies. He spent five years as sous chef at the Café Bistro MP in Mexico City, as well as undertaking a number of restaurant consultancies.
