Introducing the Punta Mita Gourmet & Golf Guests – Part III: Punta Mita Chefs

It’s that time of the year that we love the most, when we get to experience the best of local and international cuisine, wine, tequila and mezcal with world-class golf in this, the most exclusive destination in Mexico: Punta Mita!

The 8th edition of the Punta Mita Gourmet & Golf Classic will take place from November 29th through December 2nd this year, and as it is a tradition already, it will be  a long weekend full of the best food, wonderful golf, great company and amazing parties.

As we have done it in previous years, we will be sharing with you a series of articles showcasing the Special Guests participating in the Punta Mita Gourmet & Golf 2018. In this third article, we invite you to meet the Punta Mita Chefs who will be joining the guest chefs to surprise us with their creations.

Esther Sanchez

Originally from Guadalajara, Esther grew up loving to be in the kitchen. Fascinated with traditional Mexican cooking, it was her passion, goal and challenge to excel at this form. She studied at the Culinary and Gastronomy Institute of Mexico and joined the Four Seasons in Houston following her work and training in several renowned restaurants around the world. These include famous names like Arzak, Spain or Sofitel Porte de Sèvres. In 2008, she returned to Mexico to join Four Seasons Resort Punta Mita where her dream came true. Her dream to have the freedom of settling in Mexico and to continue growing and expanding her knowledge. She was recently promoted to Chef of Aramara Restaurant, the Asian fusion concept at the resort. She always strives to incorporate fresh and locally sourced seafood as well as market produce.

Jorge Gonzalez

It is with great excitement that we introduce Jorge Gonzalez as our new Executive Chef here at Four Seasons Resort Punta Mita. With 13 years of experience with Four Seasons, Chef Jorge is a veteran of Punta Mita as he was the restaurant Chef here until 2012, before transferring to our sister property in Mexico City as Executive Sous Chef, where he was instrumental in the launch of their new restaurant concept Zanaya. Passionate about his culinary heritage, Jorge has developed a strong culinary craftsmanship which has taken him around the world as guest chef or task force to showcase his talent in Indonesia, Egypt, Spain, Nevis, Hong Kong, Russia, Costa Rica and USA. Willing to challenge his potential with an opening, he joined Rosewood in 2016 in Puebla as opening Executive Chef to launch their new property. He and the property made a huge culinary statement in the city. Jorge is originally from Guadalajara, even if he does call Punta Mita home.

Julio Curiel

Originally from Puerto Vallarta, Jalisco, Mexico, and with 14 years in the kitchen, Chef Curiel’s culinary tour includes Café de Artistes in Puerto Vallarta, Grupo Vidanta in Riviera Nayarit, starting at The St Regis Punta Mita Resort 5 years ago, for different areas, until becoming Banquet Chef and now being the new Chef of the Sea Breeze Restaurant.

Among his favorite ingredients are tomatoes, herbs from the orchard, as well as playing with fish from the region and its famous roasts, in the restaurant Sea Breeze part of the menu include Latin dishes such as Peruvian ceviche or Uruguayan chivito as well as a selection of old meats USDA prime.

Manuel Peruyero

As Executive Chef of The St. Regis Punta Mita Resort, Chef Peruyero oversees all culinary operations of the five-diamond resort, including Carolina AAA Diamonds Award, Sea Breeze, Arecas, Marietas, Altamira, Oyster Bar, Mita Mary Boat, in-room dining, weddings & events.  Throughout his career, Peruyero has served as executive chef at various high end  profile properties including Capella Hotels, The Westin Resort & Spa Los Cabos, Sheraton Miramar, W Hotel Mexico City. Prior to that, he was part of the culinary team at The Ritz-Carlton Cancun, The Ritz Carlton Pentagon City, The Ritz Carlton Reynolds Plantation, Capella Pedregal and Ambrosia. Graduated from the Ambrosia Culinary Center.

Chef Peruyero is native from Poza Rica, Veracruz;  Peruyero’s international experience contributes a unique and refreshing perspective to The St. Regis Punta Mita culinary team.

Pato Pérsico

Originally from Argentina, “Pato” began his passion for cooking in 1992 when he joined the Las Leñas Ski Resort’s Due Restaurant in the city of Mendoza. From that moment forward, his great love for gastronomy arose until the development of his characteristic stamp- a passion based on regional products of local origin, combined with a palate of complex flavors. He has acquired this talent throughout his different trips over 25 years of experience in the kitchen. He has worked in renowned restaurants in France, Italy and more recently in his own restaurant, LatitudN in Palma de Mallorca, Spain. Herbs, flowers, local produce and flavored oils are the basic ingredients used to prepare each of his exquisite dishes. Currently, in Punta Mita, this chef is behind the creation of the notoriously Mediterranean menu offered at Kupuri Restaurant. He is also the Executive Chef of Punta Mita Beach Clubs.

Sandra Herrera

Born in the vibrant and beautiful Mexico City, her passion for cooking began at a very young age which made her study at one of the first gastronomy universities The Superior School of Gastronomy. Her professional life began in Nashville, TN at the Gaylord Opryland Hotel and convention center where she developed in several areas such as the Commissary, Banquets and restaurants of different specialties. When she returned to Mexico, she collaborated with La Comercial Mexicana in its new concept of gourmet supermarkets “City Market” as Chef de Cuisine. She later joined the Four Seasons Family at the Miami location.

After a while missing her beautiful city, she was presented with the opportunity to join the culinary team of “Hawks Cay Resort” in the Florida Keys, where she spent 3 years as a Chef. Restaurant in Tíos Bar to, eventually, take over the Beach Grill at the property.

Finally the opportunity to return to her country was given again with Four Seasons Punta Mita where she is currently directing the grill restaurant on the shore of Bahia Beach.

Sergio Chávez

Sergio Chavez has a brilliant career in the gastronomic world, and until recently he was Culinary Creative Director at group Antromex. Sergio’s passion for Mexican gastronomy has taken him through different positions and companies, he was Culinary Director fro Nativo Restauran, Executive Chef at W Mexico City, Executive Sous Chef at The St. Regis Punta Mita Resort, Cuisine Chef at St. Regis Doha and Stage at El Bulli among many others. Sergio Chavez is joining the Punta Mita culinary team as Chef Task Force at the Pacífico Beach Club.
