Award-winning Mexican Chef Luis Fitch opens Los Xitomates restaurant, bringing his signature “Alta Cocina Mexicana” or “High Mexican Cuisine" to Punta de Mita after his much acclaimed location in Puerto Vallarta, years before.
Nestled in the jungle landscape, this upscale destination restaurant has an expansive terrace and swimming pool offering stunning views over the jungle canopy down to the Pacific Ocean with vistas of the Bay and Puerto Vallarta in the distance. The space is open and elegant, much like dining on the terrace of a friend’s beautiful home.
Chef Fitch pays homage to Mexico's pre-Colombian roots, then combines “New World” elements brought during the Colonial period, up to today's most recent influences of Mediterranean, Continental, Caribbean and Asian cuisine. He prides himself on using organic local produce (even from his home-grown garden) and from regional purveyors of meat and fish. Along with his take on Modern Mexican cooking, Chef Fitch accommodates various preferences and dietary restrictions offering vegetarian, vegan and dairy and gluten-free options.
