Chiles en Nogada, a true Mexican flavors extravaganza!

Chiles en Nogada are a unique Mexican culinary tradition that combines the flavors, colors and history of the country with the sophistication and artfulness of their gastronomy to create a unique flavors extravaganza!

Chiles en Nogada are prepared with with poblano chiles stuffed with a mixture of meat and dried fruits, covered in walnut sauce, and garnished with pomegranate seeds, giving it the three colors of the Mexican flag. Traditionally this dish is prepared during the months of August and September when pomegranates are in season and the date also coincide with Mexico’s Independence celebrations making this dish both patriotic and festive.

Its creation goes back to the times when Mexico became an Independent Republic, times when the colors green, white and red began to be used as national colors in 1821, when the Trigarante Army, leaded by Vicente Guerrero adopted these colors on his flag.

In 1821, Agustín de Iturbide signed the documents that declared Mexico free and independent from Spain, on its way to Mexico City to become the first emperor of Mexico, he stoped at Puebla to celebrate his name day, knowing this, the Santa Monica’s convent decided to prepare a dish in his honor. The nuns combined on this dish the green chile poblano with a new and complicated filling prepared with fruits and ground beef, a white walnut creamy sauce and bright red pomegranate seeds.

Best of luck on your new journey Ceci Paredes!

We know farewells are sad, but we are certain that every change is a new opportunity to get better and grow. Saying goodbye to Ceci after having her as leader of PEACE Punta Mita isn’t easy at all, but she has laid the foundations for the strong and successful organization that PEACE is today.

Ceci took the role of Executive Director on April 01, 2013 of PEACE Punta de Mita A.C., and her presence was critical to the start-up, it was thanks to her leadership and profound effort that the process of winding up the old Peace, and starting up the new PEACE was such a successful achievement.

Her strong leadership abilities were the driving force behind the successful introduction of the new PEACEstrategy of improving the lives of the local villagers by investing in the next generation, children & youths, focusing principally on education.

Not only overseeing already implemented programs such as Avanza and Computers, Ceci orchestrated new ones, including Campeones, and most notably the English Program which excels by reaching over 1,200 students in the community to improve invaluable second language skills, whilst creating social change. Four years on, Ceci is now closing this chapter of her life with PEACE to seek new challenges.

With the reorganizing of the PEACE team, Ceci will be passing the torch to new Executive Director, Ali Elíasand the team. In addition to this mentoring role, she will also be dedicating herself to some key projects, including an amazing new PEACE Learning Center which will be built on land provided by Dine. We thank Ceci for her determined leadership and profound contribution to start PEACE in difficult times, and to launch it on its path of success.

To wish Ceci farewell, PEACE staff organized a surprise gathering to celebrate her achievements and wish her well on her ventures! Members of the community, including SEPThe St. Regis Punta Mita Resort and Four Seasons Resort Punta Mita staff, along with students and their families, met in the “Casa de la Tercera Edad“  to surprise Ceci. The night was full of great music, traditional dance, and memories, with great food and drink supplied by the hotels and community members.

We wish you nothing but the best Ceci, good luck in your new projects and thank you so much for all your love and devotion for this community.

¡Buena Suerte Ceci!

3:30 pm – Inaugural Punta Mita Ocean Sports “Kupuri Derby”

Catherine Bell returns to Punta Mita, Riviera Nayarit!

She really likes it! US actor and model Catherine Bell seems to have found in the Riviera Nayarit a favorite haven, as in the past three months she’s twice chosen Punta Mita, the Glamour Peninsula, for her vacations.

This time Bell celebrated the 4th of July festivities Mexican-style, toasting to the United States’ independence with tequila and enjoying regional dishes, including the pescado zarandeado.

After her first visit—which took place in May—the celebrity fell in love with the Riviera Nayarit’s gorgeous natural scenery and the excellent service received during her stay at the Four Seasons Resort Punta Mita. So much so, that she promised to return… and she did!

By June 28th Bell was already “counting the days” until her return to the destination, announcing her visit on social media and thrilled to this time be “with the kids,” since in May her trip was a solo one.

The actor and model once again booked a stay at the Four Seasons Resort Punta Mita where she was treated like a queen, as can be seen in the images she shared on her social media accounts. In the pics, Catherine is captured fully enjoying the hotel’s amenities and there’s a record of her visit to the Islas Marietas National Park, where she even hopped on a paddleboard.

“And another magical day in paradise!? Thank you for such a special day Waldo!” she wrote, referring to the guide who took her to visit the Islas Marietas. Bell also posted a picture of her daughter, Gemma, on a boat floating across from Playa del Amor with the caption: “My pretty ‘little’ girl! Amazing family vacation!”

The response from her followers on Instagram was immediate, with messages of appreciation for sharing such beautiful pictures and asking her whereabouts on the one she posted of her on a paddleboard.

Catherine Bell has 41.2 thousand followers on her official Instagram account, 35.4 thousand on her Facebook account and 72.7 thousand on Twitter.

The British actor and model is remembered for her role as Sarah “Mac” MacKenzie in the seriesJAG, where she worked between 1996 and 2005. From 2007 forward she can be seen playing Denise Sherwood in the Lifetime TV drama, Army Wives. 

Her first appearance on the big screen was as Isabella Rossellini’s body double in the movie Death Becomes Her. Afterwards she participated in movies such as Men of War, Black Thunderand Bruce Almighty, with Jim Carrey and Morgan Freeman. Other credits include Alien Nation: Body and Soul, Cab to Canada, The Time Shifters, Company Town and, more recently, The Good Witch and its sequel, The Good Witch’s Garden.

PEACE Punta de Mita introduces their New Executive Director!

It seems like it was yesterday when Ceci Paredes was taking on the role of Executive Director of PEACE Punta de Mita, but it’s been 4 years already!

Back in 2013, Ceci was critical to the start-up as it was due to her leadership and profound effort that the process of winding up the old Peace, and starting up the new PEACE was such a successful achievement. With the reorganizing of the PEACE team, Ceci will be passing the torch to new Executive Director, Ali Elías and the team. Ali Elías, previously PEACE Education Supervisor, obtained her law degree at the University of Tepic, and moved to the Punta de Mita area in 2005. Ali began working with PEACE as a teacher over 8 years ago. Prior to the start-up of the new PEACE, she was a teacher at the PEACE Center and played the key leadership role in the success of the AVANZA program. When the PEACE English Program expanded in April 2015, Ali was promoted to Education Supervisor – responsible for over 80% of the PEACE operating budget, in which her experience and determination greatly contributed to the successful partnership between PEACE and SEP [Secretaria de Educacion Publica].

Following the foundations that Ceci has laid down, Ali will continue to meet PEACE’s mission that aims to influence social change within the local villages, focusing and investing in education for the younger generation. Ali’s enthusiastic child-centered teaching method has inspired and changed the lives of many local children, and her successful method has been adopted by the PEACE teaching staff. She plans to continue growing the solid PEACE relationship with the Punta de Mita local community, and will manage the various PEACE programs and initiatives, overseeing the positive impact on local’s lives.

Ceci will continue working with PEACE but now with a mentoring role, she will also be dedicating herself to some key projects, including an amazing new PEACE Learning Center which will be built on land provided by Dine.

We thank Ceci for all the hard work done for the community in the past years and we wish her nothing but the best in her new project. At the same time, we would like to con congratulate Ali for her new position wishing her a bright future with PEACE, we are sure that she’ll take this amazing organization to the next level.
