Our neighbor, Four Seasons Resort Punta Mita, has announced a culinary partnership with celebrated vegan chef and healthy living educator Leslie Durso to create new plant-based offerings at the Resort’s three dining destinations – Aramara, Bahia by Richard Sandoval and Ketsi.  Inspired by a commitment to fresh, local ingredients and a desire to cater to an array of healthy lifestyles, the Resort is elevating its vegan dining with the addition of 25 new innovative, plant-based dishes designed by Durso, including appetizers, soups, salads, entrees and desserts.

“Through our partnership with the talented Leslie Durso we are setting a new standard in healthy resort dining with elevated vegan offerings across our entire restaurant portfolio,” says John O’Sullivan, General Manager, Four Seasons Resort Punta Mita. “Working alongside our team of chefs, Durso has created plant-based dishes that are both nourishing and delicious, infused with flavours and ingredients authentic to the paradise destination of Punta Mita.”

The locally-inspired vegan dishes created by Durso are available at the Resort’s signature dining destinations AramaraBahia by Richard Sandoval and Ketsi, and through in-room dining:

  • Aramara: Featuring Asian influences blended with a taste of Mexico, new vegan dishes at Aramara include green coconut milk curry, stir fried quinoa with crispy tofu and sundried tomato sushi rolls; served daily for dinner.
  • Bahia by Richard Sandoval: At the Resort’s contemporary seafood-centric grill located on Las Cuevas beach, new inventive vegan dishes include confit cherry tomato with zucchini satay and eggplant cannelloni; served daily for dinner.
  • Ketsi: Boasting breathtaking ocean views and modern décor, the Resort’s casual all-day dining restaurant Ketsi will serve new plant-based additions such as crispy tofu tacos and portobello asado fajitas; served daily for breakfast, lunch and dinner.

She has worked as a private chef for New York socialites, catered to the Hollywood elite and appeared on national television networks including Food Network and CBS. An avid world traveller, Durso has immersed herself in some of the most inspired kitchens in the world, from Thailand to Peru to Italy, and boasts a unique ability to create vegan dishes that are familiar, yet strikingly creative and different.

Viva México! Mexico Independence Celebrations in Punta Mita!

September is here and with it the streets in the entire country are decorated in red, white and green, a festive atmosphere invades us with flags, pinwheels and mariachi music everywhere. Contrary to common believe among foreigners, Mexican Independence is not celebrated on 5 de Mayo, but on September 16th. Celebration begins the night of the 15th, when “El Grito“ takes place, when the popular clamor of “¡Viva Mexico!“ is shout and that represents the beginning of the independence war.

Nowadays, the celebration takes place during the entire month, which we are glad for, allowing us to pay tribute to this great country while enjoying traditional culinary delicacies, the best tequila, passionate mariachi music, cheerful folklore dances and much more that Mexico has to offer.

Mexican culinary experience with Chefs Diego Niño and Jesús Durón at Carolina Restaurant – September 15th and 16th

Signature chef Jesús Durón and celebrity chef Diego Niño will create a special menu to celebrate Mexico Independence with pairing wines from Monte Xanic at Carolina Restaurant, at The St. Regis Punta Mita Resort.

The chefs will highlight the Mexican gastronomic legacy showcasing their experience working with renowned chefs as Joan roca and Martin Berastegui, as well as the influence of Riviera Nayarit on their creations.

Their regular drinks menu will be complemented with the cocktail “Maestro“, created by Jorge Carrillo, head mixologist of the resort and winner of the Hennessy Very Special contest 2016.
